A picture taken on a phone usually records when it was taken, which device took it, and very often the exact coordinates of where you were standing. Post it as-is and all of that goes with it. Some sites strip it on upload; plenty do not, and a file sent by email or messaging app keeps everything.
For JPG and PNG the picture is not re-encoded at all — the metadata blocks are removed and the compressed image data is copied across untouched, so the result is pixel-for-pixel what you uploaded, only smaller. Other formats have to be rewritten, and the row says so when that happens.
The colour profile is deliberately kept. It says nothing about you, and removing it would shift the colours of the photo you were trying to clean.
